- Crispy Aromatic Duck
- Duck Spring Rolls
- Stir Fried Duck in Hoisin Sauce

- Pan Fried Duck on Sesame Rice Noodles
- Use a Cherry Valley Gold standard A grade duck - preferably a 2.8kg bird
- Separate the skin from the flesh by blowing air between the two
- Coat the outside of the bird in a mixture of water & sugar
- Hang vertically to dry using forced air
- Roast vertically in the oven
- When roasted remove from oven & allow to rest
- Remove & shred the meat and crispy skin directly from the carcass
- Serve with freshly steamed pancakes, hoisin or plum sauce, batons of trimmed cucumber & finely sliced spring onion – PERFECT!
